We all know it’s not easy to get a full serving of vegetables into your diet every single day. Growing up we were told how important it was to eat our veggies, even if it was only to get to our desserts a little faster. Back then a few pieces of broccoli seemed hard enough.
But apparently adults are supposed to be getting 2-3 cups of vegetables every day, 7 days a week.
Luckily, as I got older, my love for this block of the food pyramid grew as my appetite for sugary treats shrunk. Now, I have no trouble pounding back potato after tomato. When I eat at restaurants little children look on with horror as I order a veggie appetizer INSTEAD of dessert. (Really, I do!) Despite my insatiable appetite for vegetables, I still find it difficult to eat my fair share. If that sounds familiar, then sit down because I have some great news.

Veggie chips are simply vegetables sliced, diced, and chopped into a snackable size, and then typically baked or fried so that you can pretend they’re not really healthy (Spoiler Alert: They are). Ahhh yeesss! Starting with one of my all time faves, sweet potatoes are excellent to snack on at the office, on your commute, at your cousin’s birthday, really anywhere. Full of fibre, vitamins B and C as well as super useful antioxidants, sweet potatoes are one of the best office snacks you can make.
They do have one drawback - everyone wants to eat yours!

Most people think of plantains as the B-list banana, which funnily enough is B-A-N-A-N-A-S! Plantain chips are one of the best ways to consume Vitamin C and are also great for heart health. Since they’re firmer and aren’t as sweet as bananas, they are great for frying up into chips with some zesty spices.
Is your workplace susceptible to cold and flu? The truth is, even with proper health and safety practices, most offices are. Say “so long” to chronic sickness with butternut squash chips! Real talk: I used to hate parsnips. When I was younger I must have had some weird taste buds because at some point these root vegetables went from Most Hated to Most Wanted. If you also have some prejudice against the parsnip plant, please pay attention.

That’s right. While not your usual “chip” shape, green beans are wonderful veggie snack to have lying around the workplace. A lot of the vitamins are kept in the skins, so go ahead and eat the whole thing! Honestly, I would pick these magic green bean chips over the family cow any day of the week.
The superfood of the last decade, kale made headlines for absolutely no reason whatsoever around 2013 and has really been kale-ing it ever since. You’ll understand why if you pop a couple dozen leaves into the oven and eat what comes out.
Kale is really tasty baked and while very thin it still makes our list of awesome veggie chips.
"My favorite go-to is kale chips, although sweet potato chips are quite heavenly. I stick to the green option predominately to better support my type 1 diabetes and blood sugar control."
Kale Chips:
1 bunch of kale chips
1 tablespoon of coconut oil (or more depending making sure all kale is lightly coated)
Himalayan salt, to taste
Pre-heat oven to 400 degrees F. De-stalk the kale, rip in small chip size pieces and toss the kale pieces in bowl with melted coconut oil. Next place kale on a baking sheet and bake kale for 8-10 minutes total, but flip halfway through. Add salt."

If you’re looking for underrated healthy office snack of the year, it's the watermelon radish. These red, petite plants lower blood pressure, detox your liver AND taste amazing! Did I mention they look dapper-as-fresh on any garden salad?
Okay these might need some explaining. Like all spinach dishes, these baked snacks are best made when fresh and dry. Packed with iron, it's hard to imagine a better healthy alternative to chips! Definitely use your broiler to achieve the right level of crispiness, and dash them with some dill and coriander if you’re brave…
Eggplant is a fantastic addition to a workplace snacking diet because of all the different ways it can be prepared. Sliced into chips or cut into fries, with a little oil and some panko this curvy cuisine turns into veggie chips to fry for.
"Eating vegetables, in general, is a great way to make sure you're nourishing your gut. While raw vegetables will always be the better options when it comes to your feeding the good guys in your gut, sometimes you can only stomach so many raw veggies (believe me I get it). Cooked veggies, like vegetable chips, are the next best nourishing (but also delicious) option. I personally love eggplant chips, I like to make them by:
Slicing zucchinis thinly at a diagonal angle (to get a bigger chip)
Seasoning them as I desire (usually just with a light sprinkle of salt)
Placing them on the trays of my dehydrator
Letting the dehydrator go at about 120 degrees Fahrenheit for about 14 hours (overnight) then enjoying them as is or with some hummus!"

Well there wasn’t mushroom on our list...but there is now! Known for their high source of fibre, mushrooms also provide a lot of vitamin D, which is especially helpful for offices that don’t get much sun. Toasted or fried up with butter and you’ll have a fungi that can’t be beat! 🤤

I know what you’re thinking. “But Jonathan, tomatoes aren’t vegetables?!” To which I say, “If pizza can be a vegetable, tomatoes get a seat at the table.” Besides, thinly sliced and oven roasted tomato chips are the BOMB, especially when eaten with basil and parmesan. 😋
Another not-quite-a-chip-but-we’ll-count-it-anyways exception is broccoli. Looking a lot like a tree, this powerful produce item can also make YOU big and strong. And it promotes healthy bone structure thanks to its high levels of calcium. Who knew?

These snacks are hard to beet...I mean...triumph over. The deep purple of a beet chip makes snacking fun, and with raw, earthy tones baked beet chips have a more neutral flavour. With some rosemary they turn into the perfect office snack, though I usually eat them au naturale. 😬
"In general, I'm not a fan of veggie chips. But there are a few brands out there that are making delicious and clean veggie chips that are as crunchy as a potato chip, but much healthier for you. My top choice is Bare - for their carrot, beet and sweet potato chips.
Saffron Road makes a pretty decent lentil chip and Beanitos black bean chips are a good protein-packed snack. But watch out for most vegetable chips on the market today - as the majority of they may have some vegetable powder included, but are mostly filled with processed ingredients, salt and fat!"

This rainbow-colored delight is very similar to kale chips, but is actually closely related to the beet family.
